Things to do off the strip in Las Vegas?

We want to go off the beaten path and see other sites. Going with wife and kids (17 and 13). Interested in Hoover Dam, Red Rock Canyon, Mt. Charleston, Fremont Street, and possibly check in on the boys from Pawn Stars (although not likely). Does this sound like an action packed trip that we can accomplish in 3 days?
